Are you looking for an easy meal that is inexpensive and sounds good almost every week? This Easy Taco Salad dish has your back! This salad is seriously one of our go-to meals. We love that it is so easy to change up and that it is super delicious.
Whenever we make this salad, I add whatever veggies we have on hand to it. For this specific picture: we tossed together romaine lettuce, carrots, tomatoes, broccoli, and yummy ranch beans. We added tortilla chips to the bottom and topped it off with vegan ranch, salsa and balsamic vinegar.
What keeps you coming back for more is the RANCH BEANS! I seriously CRAVE them! If you don’t know what they are, you need to try them! You can find them at almost any grocery store. They are usually up high or down low on the shelf, so it is a little harder to find, but definitely WORTH it.

We change up the veggies, the dressings, the beans, and even the kind of rice. One of the reasons that this salad is so easy is because you can use whatever you have on hand if you need to. We love it!

Easy Taco Salad

- SALAD INGREDIENTS
4 cups romaine lettuce, cut into small pieces
2 medium carrots chopped
2 medium tomatoes, diced
1 broccoli head, cut into small pieces
- DRESSING AND OTHER OPTIONS
Vegan Ranch
Balsamic Dressing
Salsa (we use Pace Salsa)
1 cup brown rice, cooked
1 can ranch beans, cooked
1 bag Tortilla chips
Directions
- Cook 1 cup rice according to the direction on its bag.
- Chop all salad ingredients.
- Cook the ranch beans.
- Crunch some tortilla chips on a plate or in a bowl, add the salad, rice, beans on top. Then top off the salad with your choice of dressing.
Notes
- Some optional ideas: Switch beans to black beans or your choice of beans. Add Vegan sour cream to give a different flavor. Add green/red peppers, green onions, Kale, cauliflower, cucumber, red cabbage or onion for a different taste.
